It was as delightful weekend at church (check out all the great pictures in this newsletter).  Sunday morning boasted a stunning performance of the TriQuire led by Charlie Grindle and Ellie Rollnick.  If you missed it, you can see them this Sunday in KBK and on the 13th in Saco!

 

The night before more than 50 of us enjoyed The International Dinner (featuring Costa Rica). The food was delicious and the preparation was great fun.  The decorations and socializing were just right and we were glad to welcome back some folks we have not seen in awhile.  Thank you to everyone who cooked, decorated, cleaned, attended and anything else it took to make it a success.  Special shout-out to Jan Sacco for her inspiration and organization. If you missed it (or if you were there and loved it) here are the recipes!  Lizano sauce, which is essential for CR food can be ordered on-line and the plantain chips can be purchased at Trader Joe’s.

 

Pie de Limón

Large graham cracker pie crust (if you buy the pre-made crusts in the store buy the “deep” or “large” size and

follow the directions for brushing it with an egg white and baking it so that the crust stays a bit crispier.)

2 cans (14 oz.) of sweetened condensed milk

6 egg yolks

1 cup of limón juice (here in the northern States use “key lime juice” from the bottle for best results

Combine and beat all ingredients until smooth, pour in crust, bake at 350° for 10-12 minutes, then put in fridge!!!

 

Queque o pan de zanahoria con jengibre

Secos-dry

3 tazas de harina- 3 cups of flour

1 1/2 cdita polvo de hornear  1 1/2 teaspoons of  baking powder

1 1/2 cdita bicarbonato 1 1/2 teaspoons of baking soda

1 1/2 cdita canela 1 1/2 teaspoons of cinnamon

1 pizca de sal a pinch of salt

 

Humedos-wet

3 taza azúcar morena  3 cups of brown sugar (use dark for best results)

1 taza aceite 1 cup of oil

3 huevos 3 eggs

1/2 taza jugo de naranja 1/2 cup of orange juice

3 3/4 taza sanahoria rallada  3 3/4  cups of shredded carrots

jengibre-ginger (shred a little ginger root, one or two teaspoons)  (I think you need more, it was not too gingery)
